Why Is My Sourdough Bread Stuck in the Loaf Pan?

If the top of your loaf pulls away but the bottom refuses to move, do not keep tugging at it.

Fresh bread tears easily. One stuck corner can quickly become a missing strip of crust, while the rest of the loaf stays firmly inside the pan.

Let it rest for a few minutes, loosen it carefully, and pay attention to where it stuck. That detail often tells you what needs to change next time.

This guide is mainly for sourdough and other yeast-raised pan loaves. Banana bread and other quick breads may need longer cooling times before removal, so follow the recipe when it gives specific instructions.

How to Release the Loaf Now

Start by leaving the bread in the pan for 5 to 10 minutes after baking. This gives the hot crust and crumb a little time to firm up.

Then:

  1. Run a thin silicone spatula or blunt butter knife around the sides.
  2. Work carefully around the corners, where sticking is often strongest.
  3. Tilt the pan and gently tap the bottom and sidewalls.
  4. Invert it over a cooling rack.
  5. Give the pan one controlled shake rather than repeatedly pulling on the loaf.

If the bread still does not move, turn the pan upright and loosen the edges again. Forcing it usually damages the bread before it solves the problem.

Avoid using a sharp knife against a nonstick pan. Even a small scratch can make the same area more likely to stick during future bakes.

Why Did the Bread Stick?

The pan was not greased evenly

A pan can look greased while still having dry areas in the corners, seams, or along the lower sidewalls.

Wet dough only needs one unprotected area to attach itself to the pan. Spread butter, neutral oil, or baking spray over the entire surface rather than concentrating only on the base.

The dough contains sugar, honey, or milk

Sweet and enriched doughs tend to stick more easily than lean sourdough.

Sugar, honey, milk, and similar ingredients encourage browning. Where the dough touches the pan, they can also create dark, sticky areas that hold the crust in place.

This is common with:

  • Milk bread
  • Brioche
  • Honey wheat bread
  • Cinnamon bread
  • Soft sandwich loaves

For these recipes, parchment paper is often more reliable than grease alone.

The dough is very wet

High-hydration dough remains moist against the pan for longer. Before the crust sets, it can cling to seams, scratches, and worn areas in the surface.

A wet dough can still bake well in a loaf pan. It simply needs more careful preparation.

The pan is scratched, worn, or covered with residue

If the loaf sticks in the same place every time, inspect the pan.

Scratches, rough seams, peeling coatings, and layers of baked-on oil or sugar all give the dough more places to grip. A pan does not need to look badly damaged to start releasing bread poorly.

The loaf stayed in the pan too long

Leaving a yeast loaf in the pan until completely cool can also cause sticking.

Steam continues to leave the bread after baking. When that moisture becomes trapped between the loaf and the pan, the lower crust softens and may cling to the surface.

For most sourdough pan loaves, a short rest followed by cooling on a rack works better than cooling completely inside the pan.

How to Prevent It Next Time

For a basic lean loaf, grease the pan thoroughly

Use butter, neutral oil, or baking spray and cover the bottom, sides, corners, and seams evenly.

The exact type of grease matters less than complete coverage.

For sweet, wet, or repeatedly troublesome dough, use parchment

Cut a strip of parchment paper long enough to cover the bottom and rise above two opposite sides of the pan.

Those exposed ends create a simple sling, allowing you to lift the loaf after its short resting period.

You usually do not need to line all four sides. Covering the base and two long sides is often enough.

Use parchment rated for the temperature in your recipe.

Check the pan before blaming the dough

If several different loaves stick in the same area, changing the recipe may not help.

Clean away baked-on residue and look for scratches or damaged coating. A badly worn pan may need replacing, especially if its nonstick surface is peeling.

Remove the bread at the right time

Let the loaf settle briefly after baking, but do not forget it in the pan.

For most yeast-raised loaves, 5 to 10 minutes is a useful starting point. Very soft enriched breads may need a little longer.

Look at Where the Loaf Stuck

A stuck loaf usually leaves a clue.

  • If only one corner stuck, that area may not have been greased.
  • If the entire bottom stayed behind, use parchment next time or inspect the pan surface.
  • If the stuck area is dark and syrupy, sugar or honey probably contributed.
  • If the same spot causes trouble every time, the pan may be scratched or worn.
  • If the bottom crust became damp and soft, the loaf may have stayed in the pan too long.

You do not need a complicated release method for every loaf.

Most problems come down to three things: prepare the pan evenly, use parchment for doughs that need extra protection, and move the bread to a cooling rack before trapped steam softens the crust.
