Why Is My Sourdough So Sticky?

There is a moment in sourdough baking when the dough seems to attach itself to everything at once.

It sticks to your fingers, the counter, the scraper, and somehow the outside of the bowl. Meanwhile, the baker in the recipe video is handling a smooth, elastic dough with clean hands.

The natural response is to add more flour.

Sometimes that makes the dough easier to touch. It can also leave you with a tighter, drier loaf than the recipe intended.

Sticky sourdough is not automatically bad sourdough. The better question is whether the dough is gaining strength or losing it.

Some Stickiness Is Normal

Sourdough is often wetter than ordinary sandwich bread dough. More water can help create a lighter crumb and thinner crust, but it also makes the dough harder to handle.

A healthy wet dough may still stick to your fingers. What matters is how it changes during bulk fermentation.

Normal wet dough usually:

  • Feels sticky but can still stretch
  • Becomes smoother after resting and folding
  • Holds together when lifted with a scraper
  • Gains some volume without turning into batter
  • Feels more organized later in bulk fermentation

If the dough starts messy but gradually becomes stronger, it probably does not need more flour. It needs time.

When Sticky Dough Signals a Problem

The timing of the stickiness can help identify what went wrong.

It was extremely wet from the beginning

Your flour may not be able to handle all the water in the recipe.

Different flours absorb different amounts of water. A hydration level that works with strong bread flour may feel almost unmanageable with softer all-purpose flour.

The recipe may be fine. Your flour may simply need less water.

It improved after a few folds

This is usually normal.

Freshly mixed dough has not yet formed a strong gluten network. The flour is also still absorbing water. Resting and folding give the dough time to become more cohesive.

Adding flour too early can solve a problem that was about to solve itself.

It was strong, then became loose and sticky

This often points to overfermentation.

As fermentation continues, the dough eventually begins to lose strength. This can happen quickly in a warm kitchen or with a very active starter.

Overfermented dough may look bubbly and alive, but spread badly when turned onto the counter.

It becomes difficult only on warm days

Warm dough ferments faster and feels softer.

If you follow the same five-hour schedule in summer that worked in winter, the dough may be ready much earlier than expected.

In this case, the answer is usually cooler water or a shorter bulk fermentation—not extra flour.

How to Handle Sticky Sourdough

Wet your hands before folding

Lightly wet hands are usually better than floured hands during stretch-and-folds or coil folds.

The water reduces friction between your skin and the dough. Your hands should be damp, not dripping.

Use a bench scraper

A bench scraper makes wet dough much easier to control.

Use it to lift, turn, divide, and move the dough instead of pulling at it with your fingers. It also helps you create tension during preshaping without adding more flour.

Touch the dough less

Repeatedly lifting, pulling, and repositioning wet dough usually makes the situation worse.

Decide where the dough needs to go, then move it in one clean action. Good handling is often about doing less.

Let it rest

If the dough keeps tearing or fighting you, cover it and leave it for 15 to 20 minutes.

Resting allows the gluten to relax and gives the flour more time to absorb water.

Use flour at the right stage

During early folds, use wet hands.

During preshaping and final shaping, use a small amount of flour on the outside of the dough. Rice flour is especially useful in a proofing basket because it is less likely to turn into a sticky paste.

Avoid folding large amounts of dry flour into the loaf while shaping.

When to Reduce the Water

Higher hydration is often treated as a sign of advanced sourdough baking. It is not.

A slightly drier dough that you can ferment and shape well will usually make better bread than a very wet dough that spreads across the counter.

Consider reducing the water next time if the dough:

  • Still pours or flows after several folds
  • Never develops enough strength to hold a shape
  • Spreads immediately after preshaping
  • Requires large amounts of flour to control
  • Makes the recipe difficult to repeat consistently

For a recipe using 500 grams of flour, try removing 15 to 25 grams of water on the next bake.

That small change is often enough to make the dough easier to read without completely changing the bread.

Do Not Judge Your Dough by a Short Video

A ten-second shaping clip does not show the flour, dough temperature, resting time, fermentation speed, or failed attempts behind it.

It may also be edited.

Experienced bakers do not necessarily work with dough that never sticks. They know when to use wet hands, when to reach for a scraper, when to let the dough rest, and when the dough has fermented far enough.

The goal is not perfectly clean hands.

The goal is a dough that becomes stronger as it ferments and can hold enough shape to become good bread.

Once you stop treating every sticky dough as a mistake, it becomes much easier to notice what the dough is actually telling you.
