Is Gray Liquid on Sourdough Starter Safe—or Is It Mold?

You open a forgotten jar of sourdough starter and find a layer of gray-brown liquid on top. It smells sharp—somewhere between vinegar, alcohol, and nail polish remover.

It looks alarming, but it does not always mean the starter has spoiled.

Most of the time, a smooth gray, brown, or clear liquid layer means the starter has gone too long without fresh flour. Bakers often call this liquid hooch.

The more important question is what else you can see in the jar. A neglected starter can often recover. A moldy starter should be discarded.

What Is the Liquid on Top of Sourdough Starter?

When a starter runs low on food, it becomes more acidic and may begin to separate. Liquid can collect on the surface or sometimes form in the middle of the starter.

The liquid may look:

  • Clear or pale yellow
  • Gray
  • Brown or tan
  • Very dark after a long time in the refrigerator

It may smell alcoholic, sour, vinegary, or slightly like acetone.

That smell is unpleasant, but it often points to a hungry, neglected starter rather than a dangerous one.

How to Tell Hooch From Mold

Hooch is usually smooth, wet, and spread across the surface. Mold is more likely to appear as raised, dry, fuzzy, or clearly colored growth.

Your starter may still be usable if it has:

  • A smooth gray, brown, or clear liquid layer
  • A flat or sunken surface
  • A strong alcoholic or acidic smell
  • Little recent bubbling
  • A darker top layer after refrigeration

Throw the starter away if you see:

  • Pink or orange streaks
  • Fuzzy green, blue, white, or black growth
  • Raised mold spots
  • Unusual discoloration spreading through the jar
  • A clearly rotten or putrid smell

Do not simply scrape visible mold off the top and keep the starter underneath. A starter is soft and moist, so contamination may extend farther than you can see.

Smell alone is not enough. A neglected starter can smell very strong and still be recoverable. Look at the color, surface texture, and overall condition together.

Should You Pour the Liquid Off or Stir It In?

Both methods are used.

Stirring the liquid back in keeps everything in the jar and may leave the starter more acidic. Pouring it off removes some of the accumulated liquid and usually makes the starter easier to refresh.

If the layer is dark, strong-smelling, and has been sitting for a long time, pouring it off is the simpler option.

The more important step is transferring a small amount of healthy-looking starter into a clean jar and feeding it well.

How to Revive a Neglected Starter

If there is no visible mold or unusual pink or orange growth, try refreshing the starter before giving up on it.

  1. Pour off the liquid layer, if you do not want to mix it back in.
  2. Take a small amount of starter from below the surface.
  3. Transfer it to a clean jar.
  4. Add fresh flour and water.
  5. Leave it at room temperature and watch for renewed activity.

A practical refresh is:

  • 10 grams starter
  • 30 grams water
  • 30 grams flour

This is a 1:3:3 feeding ratio. It is not the only correct ratio, but it gives an old, acidic starter a useful amount of fresh food.

Whole wheat or rye flour can help a sluggish starter become active again, especially during the first one or two feedings.

One feeding may not be enough. Repeat the process until the starter rises predictably and smells cleanly sour again.

A few bubbles are encouraging, but consistent growth over two feedings is a better sign that the starter has recovered.

Why Does the Liquid Keep Coming Back?

If the liquid returns quickly, the starter is probably using up its food before the next feeding.

Try keeping less old starter, feeding it more fresh flour and water, or shortening the time between feedings.

Warm kitchens also speed up fermentation, while starters left in the refrigerator for several weeks are more likely to separate.

When in Doubt, Start Again

Sourdough starters are often more resilient than they look. A gray or brown liquid layer can be unpleasant, but it usually tells a simple story: the starter has been left unfed for too long.

Pink, orange, or fuzzy growth tells a different story.

If you genuinely cannot tell whether you are looking at liquid, dried starter, or mold, do not taste it to decide. Flour and water are inexpensive. Doubt is harder to remove.

The goal is not to save every jar at any cost. It is to recognize when a starter needs food—and when starting fresh is the safer choice.
