Our cookware is made from cast iron, with either an enamel finish or a traditional oil-seasoned cooking surface. We don't use synthetic non-stick coatings.

Use & Care

Pre-Seasoned & Ready to Bake
The cast iron is pre-seasoned with vegetable oil and ready to use. The seasoning will continue to develop with regular baking and care.

Grease Before Baking
Lightly grease each cavity before adding batter to help brownies and other baked goods release more easily.

Hand Wash & Dry Thoroughly
Wash with warm water and a soft sponge or brush, taking care to clean the corners of each cavity. Mild dish soap can be used as needed. Avoid prolonged soaking and dry the pan completely.

Maintain the Seasoning
If the surface begins to look dry or dull, apply a very thin layer of cooking oil after cleaning and drying.

Use Oven Mitts When Hot
The pan and handles remain hot after baking. Always use dry oven mitts when removing it from the oven.

  • Will Every Brownie Have Crispy Edges?

    Each brownie bakes in its own square cavity, so all four sides are in direct contact with the cast iron. This gives you a much higher edge-to-center ratio than baking one large tray and cutting it afterwards. How crisp the edges become will still depend on your recipe and baking time.

  • Can I Use My Regular Brownie Recipe or Box Mix?

    Yes. Your usual homemade recipe or brownie mix is a good place to start. Divide the batter evenly between the cavities and use your normal oven temperature, but begin checking for doneness earlier because individual brownies may bake differently from one large pan.

  • Do I Need to Grease the Brownie Pans?

    Yes. The pans are pre-seasoned, but seasoned cast iron is not the same as a synthetic non-stick coating. Grease the bottom, sides and corners of each cavity with butter, oil or baking spray before adding the batter to help with release.

  • Do I Need to Preheat the Pans Before Adding Brownie Batter?

    No. For brownies, grease the room-temperature pans, add your batter and place them into a preheated oven. Preheating the cast iron is useful for some recipes such as cornbread, but it is not necessary for brownies.

  • Will I Need to Change the Baking Time?

    Possibly. Individual cavities give the batter more contact with the pan than a traditional brownie tray, so don't rely only on the baking time from your original recipe. Start checking earlier and remove the brownies when the centers reach the texture you prefer. Pan material and shape can materially change brownie baking time.

  • How Do I Keep the Brownies from Sticking?

    Grease each cavity well before baking, especially the corners. After baking, allow the brownies enough time to set before removing them, then gently loosen the edges if needed. If residue remains, let the pan cool and wash it with warm water and a soft brush or sponge.

  • Do I Need to Season the Pans Before First Use?

    No. The pans are pre-seasoned with vegetable oil and ready to use. Dry them thoroughly after washing and apply a very thin layer of cooking oil when the surface begins to look dry.
